¾ cup (175 mL) Peaches, Pears, or Pineapple, diced fresh or unsweetened canned and drained
1 ½ tsp (7 mL) Lemon Juice
1 ½ tsp (7 mL) Lemon rind, grated
3 tbsp (50 mL) sweet Red Pepper, diced
1 Green Onion, chopped
2 tbsp (25 mL) seedless Cucumber, diced
1 tbsp (15 mL) packed Basil or Parsley, coarsely chopped
pinch Chili Peppers, crushed
Directions
Burger:
Combine couscous and water; let stand 5 minutes.
Mix with turkey, lemon juice and seasonings until well combined. Shape lightly into 4 patties.
Grill or broil about 5 minutes per side or until no longer pink inside. Serve on toasted bun halves and top with salsa or serve on lettuce and top with a tomato slice.
Fruit Salsa:
In a glass bowl combine all ingredients.
Let stand at least 30 minutes or chill up to 1 day for fresh fruit or 1 week for canned fruit.
