Serves : 4
  1. Heat a frying pan over medium-high heat; add the olive oil.
  2. Stir in the mushrooms and onions and sauté until lightly browned, about 8 minutes, stirring often. Set aside to cool.
  3. In a large bowl, combine the ground turkey, egg, pesto, salt, pepper and mushroom/onion mixture.
  4. Gently stir the turkey mixture until everything is combined, but don’t over mix it.
  5. Divide and shape into 4 patties.
  6. Place on a plate and cover with plastic wrap. Chill one hour.
  7. Heat greased grill to medium-high heat.
  8. Grill turkey burgers for 5 minutes each side.
  9. Slather pesto mayo on each bun and top burger with bacon, cheddar, lettuce and tomato slices.
