  1. Preheat grill to medium-high heat (375°F | 190°C).
  2. Remove skin and bones from turkey thighs and cut into 1/2 inch (1.25 cm) steaks. Coat each steak with olive oil.
  3. Mix garlic, anchovies, tomato, olives, feta, oregano, parsley and pepper in a bowl.
  4. Grill turkey thighs on one side over direct heat for about 5 minutes.
  5. Flip each steak and move to indirect heat. Divide topping mixture equally between each steak.
  6. Continue cooking for about 15 minutes until steaks are fully cooked. The meat should reach a minimum internal temperature of 170°F (77°C).
