Rinse 6-8 radicchio leaves with cold water. Pat dry with paper towel and set aside.
Using a medium pan or skillet at medium heat, add olive oil and sauté onions, garlic and mushrooms until fragrant, about 4 mins.
Add ground turkey, salt, rainbow peppercorn, red pepper flakes and half of the fresh parsley to the pan, mix and allow to cook for 6 mins breaking up clumps with a wooden spoon.
Add honey and mix through separating any new clumps that form.
Allow turkey to cook further for 10 mins or until very little liquid is left. Turkey should reach 165F (74C).
Place radicchio leaves on a serving platter and top with cooked ground turkey.
Drizzle with balsamic vinaigrette and fresh chopped parsley and chilli peppers.
