As an alternative, use approximately 1 lb of boneless, skinless turkey thigh meat and cut into bite-size pieces. Marinade as directed and thread pieces onto skewers and barbecue until done.
Except turkey pieces, mix all ingredients together for marinade. Mix turkey pieces with marinade until well-coated. Cover and refrigerate 2 to 8 hours to marinate.
Grill or broil 5” (13 cm) from heat until done (until a digital meat thermometer inserted into the meat, away from bone, registers 165F (74C)). Be careful not to overcook. Serve garnished with tropical fruits as an appetizer or with traditional rice and beans as a main course.
Suggested Canadian Brewery Pairings
Selected by Thirst for Knowledge Inc.
Strong beers or Dark Beers
Unibroue Trois Pistoles
Unibrou Fin du Monde
McAuslan St-Ambroise Vintage 2009
Okanagan Spring Brewmaster Black Brick Waterloo Dark
Sleeman Fine Porter
The high alcohol content of the strong beers creates a very spicy texture and aroma which will complement the spice of the Jerk sauce, while softening the intensity of the spice. The dark roasted flavours of the dark beers will provide a nice balance to the high heat of the Jamaican Jerk Turkey.
