Combine 1/2 cup (125 mL) apple juice, 1 tbsp (15 mL) rum, salt and pepper. Pour over turkey filets (use a shallow dish with cover) and marinate for 2 hours in the refrigerator.
Combine remaining juice and rum in a saucepan over medium heat, add honey and bring to a boil.
Stir cornstarch into cold water and add to boiling liquid, stirring constantly until well blended.
Add apple wedges and cook 1 minute.
Preheat and lightly oil grill or fry pan.
Cook turkey filets to an internal temperature of 165F (74C).
Transfer to a serving platter. Drizzle apple rum sauce over each filet. Garnish with apple wedges.
