Use any veggies you have in your kitchen for these egg cups! Chop the veggies you use into small pieces and use the same measurements indicated for the onions and bell peppers. These egg cups are a great way to use up any veggies you have on hand!
  1. Preheat your oven to 350F. Spray half of a muffin pan (6 muffin cups) with cooking spray. Line each muffin cup with 1 slice of smoked turkey and set aside.
  2. Crack eggs into a medium mixing bowl, season with sea salt, black pepper and garlic powder. Use a whisk to beat the eggs and combine all of the spices.
  3. To each turkey lined muffin cup, add about 1 tsp of chopped red pepper and ½ tsp of green onion. Use a ¼ measuring cup to scoop the egg mixture out of the mixing bowl and pour into each muffin cup. Top each cup with a pinch of feta cheese.
  4. Bake the egg cups for 15-17 minutes, or until the eggs are no longer “runny” in the centre.
