: Try this recipe with dark meat! Simply replace the turkey breast with 2 turkey thighs.
- Preheat grill to medium-high (400ᵒF | 200ᵒC).
- Combine cornmeal, brown sugar, paprika, cumin, garlic, cayenne, pepper, mustard and salt in a bowl to make rub.
- Coat turkey with the rub on all sides.
- Grill thighs over direct medium-high indirect heat for about 40 minutes until a thermometer probe reads 170°F (77°C).
