  1. In a large saucepan, heat the olive oil over medium heat.
  2. Add the garlic, ginger, and lemongrass then cook for 2-3 minutes, stirring regularly.
  3. Add the chicken stock, coconut milk, and green curry paste.
  4. Bring up to a gentle boil and cook for another 3-4 minutes, stirring to incorporate.
  5. Add the hearts of palm, snow peas, salt and leftover Butterball turkey. Stir and cook for another 3-4 minutes to warm through.
  6. Finish with the scallions, peanuts, and freshly picked cilantro. Serve with fresh lime wedges for squeezing and a side of rice.
