In a large bowl, whisk together the mustard, honey, lemon juice, and olive oil. Season with salt and pepper to taste then set aside.
Next, preheat your greased grill to medium-high heat.
Add the bacon and grill for 2-3 minutes per side, or until crispy and golden. Remove from the grill.
Coarsely chop the bacon. Add the potatoes and chopped bacon to the bowl with the dressing, followed by the spinach, corn, and scallion. Toss in the dressing, then transfer to your serving platter.
Top with some of the freshly grated cheese and enjoy!
