Turkey Baida Roti

Serves : 6-8
Prep Time : 25 mins
Cook Time : 20 mins
For the dough:
  1. Gently bring the dough ingredients together, adding the water a little at a time to form a ball of dough that is slightly soft to touch.
  2. When the dough comes together into a ball then knead it for a few minutes till it is nice and smooth.
  3. Let the dough rest for 30 minutes.
  4. Divide your dough into 7 pieces and roll each piece into a smooth ball.
  For the filling:
  1. Heat oil in a saute pan on medium high heat.
  2. Add the cumin seeds when the oil is hot.
  3. Add onions and ginger garlic paste and saute for 3-4 minutes.
  4. Now add your ground turkey and cook stirring frequently for 4-5 minutes to brown the turkey.
  5. Stir in salt, coriander powder, and chilli powder.
  6. Add the chopped tomatoes, green chillies, lime juice, and cilantro.
  7. Taste for seasoning.
  8. Let the mixture cool.
  Assembling the Turkey Baida Roti:
  1. Beat the eggs and add chilli powder to taste.
  2. Flatten a dough ball with your hands and roll itl out into a thin round sheet.
  3. Lightly brown a sheet/roti on both sides in a hot pan with a little oil.
  4. Spread 2 tbsp egg mixture onto one side of the roti, flip and cook for 60 seconds.
  5. Add Turkey Keema setting to the centre of the roti.
  6. Fold each side of the roti onto itself to form a square parcel with the Turkey mixture in the centre.
  7. Add a little extra egg mixture (approximately 1-2 tbsp) if needed to help seal any gaps, flip over to allow the egg to cook through.
  8. Remove from a pan, cut into 2 pieces.
  9. Repeat with the remaining dough balls until used up.
  10. Serve warm with your favourite chutney.
