Cook Time: 60 mins
  1. Mix the turkey thighs with olive oil, salt and pepper. Mix the peppers with olive oil.
  2. BBQ them over high heat until the turkey has grill marks and the peppers have started to blacken, then chop them into bite sized pieces.
  3. In a large pot, sauté onions and garlic in olive oil for a few minutes. Add cumin and sauté for another minute then add wine if desired.
  4. Add turkey, peppers, stock, bay leaves, thyme, chili powder, lime juice and hot sauce.
  5. Simmer partially covered on low for 30 minutes.
  6. Add spinach and beans, then simmer for an additional 15 minutes.
  7. Add cornstarch mixed with water.
  8. Simmer for an additional 10 minutes, season with salt and pepper to taste
  9. Serve with sour cream, fresh cilantro and taco chips.
