1 1/2 cup | 375 ml Granny's Leftover Turkey or Granny's Boneless, Skinless Turkey Breast, roasted
1 tbsp| 15 ml Sesame oil
3 cups | 750 ml leftover cooked rice
1 cup | 250 ml frozen vegetable medley (corn, peas and green beans)
1/4 cup | 60 ml yellow onion, chopped
1 tsp| 5 ml garlic, minced
2 tbsp | 30 ml dark soya sauce
1 tbsp | 15 ml Chinese cooking wine (Shaoxing wine)
2 large eggs, scrambled
1/4 cup | 60 ml green onion, chopped
Directions
In a large frying pan, heat sesame oil over medium heat. Add day-old rice and onion. Heat up, breaking-up the rice.
Once onions are fragrant, add garlic and vegetables. Stir fry over medium-high heat for 3 minutes. Add sauce mixture and stir, ensuring rice is fully covered.
Add leftover Granny’s turkey and cook for an additional minute.
Create a well in fried rice and pour beaten egg. Scramble the egg as it cooks for 2 minutes or until solid, until solid. Break up into smaller pieces and mix throughout the rice and turkey mixture.
