  1. Preheat the oven to 400°F.
  2. Season the turkey breast with salt and pepper.
  3. Heat a drizzle of oil in a pan over medium high heat. Sear the turkey breast 3-4 minutes on each side. Remove from the pan and place in a baking dish and cover.
  4. Bake the turkey breast in the oven for 30-40 minutes, until the internal temperature reads 165°F.  Let stand 10 minutes before cutting into thin slices.
  5. Place the ingredients for the cilantro chutney in a food processor.  Mix for 1 minute.  Add salt to taste.
  6. Garnish the bread slices with the chutney, turkey slices and the other ingredients.
  7. Heat a drizzle of oil in a pan over medium high heat. Cook the sandwich 2-3 minutes on each side until the cheese has melted.
